No-Sugar-Added Cheesecake
From Delicious DisneyBut taste-wise this cake was pretty good. It probably could have used one of those reduced-something ingredients to be swapped out with the original (we're thinking the cream cheese) but it was still a nice dessert as-is and it probably would be extra tasty with some fruit on top. We only had a little sample tonight since the cake is for everyone's favorite Linus, but hopefully the Becks will enjoy it tomorrow.
Ingredients
- 1 1/4 cups sugar-free vanilla wafer cookies, crushed
- 4 Tbs butter, melted
- 4 Tbs sugar-free sweetener
- 2 Tbs cornstarch
- 24 oz cream cheese, softened
- 3 eggs
- 1 egg white
- 1/2 cup sour cream
- 1 1/2 tsp fresh lemon juice
- 1 tsp vanilla extract
Preparation
- Preheat oven to 375.
- In a medium mixing bowl, combine cookie crumbs and butter. Press into the bottom of a 9-inch round springfoam pan.
- Bake for 7 minutes, then allow to cool completely.
- Reduce oven to 325.
- In a large mixing bowl, sift together the sweetener and cornstarch.
- Add cream cheese, then beat at a low speed with an electric mixer until creamy.
- Add eggs, egg whites, and sour cream and beat at low speed for 1 minute.
- Stop the mixer and scrape the sides of the bowl with a spatula.
- Add the lemon juice and vanilla extract, beating for 1 more minute.
- Pour into prepared crust. Bake for 45 to 50 minutes, or until firm and golden around the edges but still slightly moist in the center.
- Let cool thoroughly, and serve.
